What the Barossa tastes like

Warm days and cool nights on the valley floor give ripe, generous reds: blackberry and plum, dark chocolate, warm baking spice, and a soft, rounded finish. Wines from the higher, cooler Eden Valley run finer and more peppery.

Old vines — some planted in the 1840s and never grafted — give lower yields and more concentrated fruit, which is why single-vineyard bottlings carry the vine age on the label.

Top picks to start with

Old-vine Shiraz, single vineyard: the full Barossa statement — dense, dark, long. Cellars well for a decade or more.

Estate Shiraz: the everyday expression of the same fruit, softer and ready to drink now.

Grenache: lighter in colour, red-fruited and floral, excellent slightly chilled.

GSM blend (Grenache, Shiraz, Mataro): the region's most food-friendly red.

Pairing at the table

Old-vine Shiraz: char-grilled beef, lamb shoulder, Peking duck, or aged hard cheese.

Estate Shiraz: braised pork belly, red-braised dishes, mushrooms and soy-based sauces.

Grenache: roast duck, five-spice chicken, tomato-based dishes, and cured meats.

GSM: hotpot, barbecue and anything with chilli and warm spice.

Serving, cellaring and shipping

Serve reds at 16–18°C, cooler than most rooms, and decant a young old-vine Shiraz for half an hour.

Store bottles on their side, away from light and temperature swings.
